Reduce heat to very low, cover, and cook for 15 minutes. 2½ cups dry rice, 1½ cups stock, 4 bullion cubes, 6 oz tomato paste. After 15 minutes, remove the lid and stir in the frozen mixed vegetables, adjust salt and pepper.

Ghanaian Jollof Rice is simply a party pleaser meal for every occasion

In the same pan, gently fry the onion, garlic, ginger and chillies until softened and translucent. Turn up the heat and add the peppers and carrots. Cook until the vegetables have softened, which should take around 5 minutes. Add the curry powder, tomato puree, thyme and blended tomato to the mix.


Preheat oven to 375° F. Add stew to a pot and bring to a simmer over medium (5) heat. Add rice and mix well. Let rice and stew fry on the stove for ~3-4 minutes or until stew becomes less wet, stirring often. Add enough liquid to just cover the rice, and stir well. Adjust taste as needed.


Instructions. Make the tomato and pepper sauce by blending all the ingredients in a blender until smooth. Set aside. In a large pot, preheat the cooking oil on medium heat and add the chopped onions. Fry for 3-5 minutes until onions become soft and translucent. Add tomato paste and fry for 5 minutes.


Set out a large pot and a medium pot. Place the large pot over medium heat. Add the oil, rinsed rice, chicken bouillon, curry powder, paprika, thyme, and bay leaf. Toss to coat the rice in the spices. Then stir in 4 cups water. Cover and cook for 15 minutes, or until vent hole form on the top of the rice.


Turn down the heat and cook on the lowest possible heat for 30 minutes, stirring half way through. Stir rice—taste and adjust as required. If rice isn't soft enough/ needs additional cooking, add 1/4 to 1/2 cup of stock or water, stir through and continue to steam, on low till cooked through.


In a pan, saute some oil over medium or low heat. Add the onion paste and cook until the water evaporates and they start turning brown. Pour in the tomato puree then add in some salt and add other spices. Add the meat and broth then cook for 15-20 minutes while occasionally stirring until the stew turns deep red.


Heat the oven to 350 degrees. Combine the dried garlic, thyme, cayenne and 1 bay leaf in a spice grinder and pulse until finely ground; reserve. Heat the oil in a Dutch oven or other heavy large.

Cover the pot and let the rice cook for 15-20 minutes or more if needed. While the rice is cooking check on it and stir if needed.

PREPARATION. Put tomatoes into the blender and set aside. Then, in a non-stick pot, fry pre-cooked meat in oil. When these have browned, remove and set aside. Add onions and fry until soft before adding garlic and blended tomatoes. Add meat stock and/or stock cube (s), tomato paste, ground white and black pepper and stir.


Jollof Instructions. In a large skillet over medium, heat the oil until shimmering. Add the onion and cook, stirring, until beginning to brown, 6 to 8 minutes. Add bell peppers last 3 minutes. Stir in the rice, curry powder, paprika, thyme, 1 teaspoons salt and 1 teaspoon pepper.


Heat the oil in a large Dutch oven (mine holds 3 quarts) or a heavy-bottomed pot over medium heat. Add the onions and fry for 2 to 3 minutes, until fragrant and the edges get a little brown. Scoop out about a third of the fried onions on a small plate or bowl, and set it aside.
