1 shallot (s) 1 tbsp oyster sauce. 1⁄2 tbsp dark soy sauce. 1 1⁄2 tbsp fish sauce. 250 g minced chicken. In a wok heated at medium heat, sauté minced garlic, sliced chillies and shallots until fragrant. Then, add minced meat. Once meat is slightly browned, add oyster sauce, dark soy sauce and fish sauce. This Thai basil chicken recipe (pad kra pao gai ผัดกระเพราไก่) is a true classic. It's one of the most popular Thai street food dishes. The chicken is stir fried with Thai holy basil, and served on top of rice with a fried egg on the side.


Step 1. Heat a wok or large nonstick skillet over medium-high, then swirl in the oil. Once the oil is shimmering, add the ground chicken and cook, actively breaking the chicken up into small pieces, until it is mostly cooked, about 6 minutes. Step 2. Stir in the garlic, sugar and chile until evenly distributed and fragrant, about 2 minutes. In a wok over medium high heat, add the oil, shallots and garlic, and fry for 3 minutes. Add the chilies and cook for another minute. Crank up the heat to high, and add the ground pork, breaking it up into small bits and allowing it to crisp up. Add the sugar, fish sauce, soy sauce, dark soy sauce, and oyster sauce.
